- 2 Whole Turnip Peeled, Chopped
- 1 Pound String Beans Trimmed
- 2 Tablespoons Olive Oil Extra virgin
- 2 Cloves Garlic Minced
- 1 Small Shallot Minced
- 1 Pinch Red Pepper Flakes
- ½ Teaspoon Fresh Lemon Zest
- ½ Cup Edamame Beans Boiled
- 1 Tablespoon Fresh Coriander Optional
- 1 Tablespoon Parmesan Cheese Fresh & Garnished
Bring a medium pot of water to a boil. Once boiling, add the string beans and cook for about 5 minutes or until the beans arestring-tender. Take it out and keep it aside.
Placea pan over medium heat and add olive oil. Once the oil is hot, add the garlic,shallots and red pepper flakes and cook for 2 minutes or until the shallotssoften.
Once the water starts to boil, place a large pan over medium heat, add the turnip noodles and toss well to combine. Season with salt and pepper and cook, covered, for 5 minutes or until the turnip noodles are tender.
Once cooked, toss with lemon zest, string beans, vegetable mixture and edamame.
Let cook for 2 minutes so the edamame is heated through and the flavors combine.
Ladle pasta into bowls, garnish with Parmesan cheese and serve.
